Basic assumption � one has to see the video. Fundamental question - when is death, is it at Shechita, or minutes later? Some maintain that Shechita=death.
For example Jeffrey writes: Halakhically after the esophagus and wind pipe are severed the animal is considered dead, though it might have mechanical reactions afterward, halakhically known as 'pirchus�. That's what's behind the well-known phenomenon of the 'chicken running around without a head.'
Anonymous Torah source argues: Pirchus refers to nerve movements AFTER death. It means non centralized activity. This is found in Mishnayot Oholot. If animal seems to have the desire to rise and get up that seems to be a thought out (with cow brains) desire. Is this decentralized? Is it dead? The definition of death is: (a) a chopped off head, (b) stopping of heart and brain activity. After that you might have pirchus. If the heart of the animal is beating it�s alive.

Anonymous Torah source: There is no sheeloh [question] on the kashrut or ever min ha chay. So far from what I can tell (after watching the video) it is kosher. Subsequent to shechita and shechita only, ever min ha chay falls off. Anyone may cut out the throat, etc. and eat after it stops twitching (dead). But, by a nevelah (dead animal) if the animal is cut up before death there is ever min ha chay. In short, this sheeloh MAY happen in a teref slaughterhouse not in Rubashkin. To repeat, there is no halachic sheeloh regarding shechita, only tzaar baal chayim which is another IMPORTANT issur. Use of electric prodding is against the law as well as an inexplicable yanking of the throat.
You have official statements from Israel, OU, etc.This is why the OU is embarrassed. What is the word chayim doing there? I still do not know why the goyim pull out the trachea.
Tzemach Atlas: Electrical prodding is BEFORE Shechita. This is puzzling as animals are stunned with electricity in non Kosher slaughterhouses and this is exactly what Kosher establishments vehemently opposed. Opinions from OU and others must state explicitly that the moment of Shechita is NOT death.
The profession of Shochtim evolved from soul masters to factory workers with unconceivable 3-4 seconds per chicken rate. Managers who employ Shochtim know that they have nowhere to run with large families, no unions and often no other skills. They abuse this reality by schooling the Shochtim to keep their �mouths shut�. For example a friend from Israel, was dismissed from a slaughterhouse in NJ after he complained about unacceptable treife procedures. There are frequent rumors about financial corruption in the kosher food industry, which has an affect on kashrus.
